The tray holds a single layer of charcoal, which is ignited using the existing gas burners and then allowed to ash over before cooking begins. An integrated, covered wood chip holder is built into the tray for use with soaked or unsoaked wood chips, and wood chunks can also be placed directly in the charcoal bed for additional smoke flavor.
